eggplant parmesan! slaved over the stove for like 45 minutes...it's pretty good. only thing i would change is to add some italian sausage.

Completed steps 1 and 2 today. Tomorrow I'll do steps 3 and 4. After a week, I'll have a tasty batch of pickled eggplant. So yummy tossed into an Italian salad.

I love eggplant but never make it at home. Every time I've tried it just doesn't come out right. My fave is eggplant tofu. So good. Need to brush up my cooking skills and figure this out!!!

I make the BEST Eggplant Parmesan EVER. I have never had anyone eat it anywhere else after they eat mine. I have to give the recipe to the family only and swear them to secrecy. It is the best thing... more

Raebaby *Evil Goddess of the Glue* The parmesan is so much work but so worth it. Never heard of eggplant tofu. One thing that most people don't do & to me makes all the difference is peel the eggplant. But before you do that cut it in half lay both sides down on paper towels overnight and drain the water. Makes it denser. Then peel & do whatever you want with it. Even just fried is yummy, but use olive oil & make sure you change the oil every couple of batches. I coat mine with flour & spices like Kashi does
