Pho is yummy and comparable to the Mexican dish called Caldo. This tasty bowl of beef broth which usually contains one or more of a variety of beef meets; i.e. thin sliced flank, steak, Vietnamese meatballs, etc; and rice noodles. That is the base and what fallows is the customization of this dish.
When served, it is accompanied by the following: Hot Peppers, Salt, Soy Sauce, Cilantro, Limes, Sugar, MSG, Fish Paste, Bean Sprouts, Black Pepper, Mint, Red Pepper Flakes, Sriracha Hot Chili Sauce (Cock Sauce), Hoisin Sauce, Scallions, Basil, Green Chile Peppers and Fish Sauce.
You take your base and add any of the above ingredients to make your soup sweet and sour, spicy, tangy, salty, BLAZING HOT, etc. The point is you are in control of what you eat.

My favorite is the Pho with the thin flank steak, juice of 2 limes, handful of sprouts, three big squirts of the Cock Sauce, pinch of salt, black pepper and MSG, big sprig of cilantro, lots of soy sauce and scallions. Try it!

not currently eating it, but it is my favourite food! Pho Tai Nam and Pho Tai Gan Sach!!
