My favorite of the Swiss cheese dishes: raclette, malakoffs, fondue. The best is not one of these little raclette ovens. It's when they take a giant half wheel of cheese, and stick the cut side near the fireplace. They scrape it off with wooden paddles onto a plate and mark on the paper tablecloth with grease pencil each time you ask for a helping. Your table will have boiled potatoes, cornichons, and pickled onions, and traditionally you order viande des grisons and drink a slightly sparkling Swiss white wine called Fendant.
