Uncooked sushi she had eaten 2 weeks earlier (Pink Ladies to be exact).Anisakis is found in marine mammals. The parasitic worm lays eggs in the sea lion’s gut. The eggs enter the water & are hatched. The larvae are eaten by a crustacean & eaten by a fish. The fish is then eaten by a sea lion and the cycle is complete. Anisakis parasite is not adapted to the human gut. It tries to burrow out and when it can’t, it dies. In a human, it’s even more deadly than when it’s alive. Anisakis can’t live a long time inside a human gut and when it dies, it triggers a massive immune response.Although the laws vary here in the US, many states require sushi to be pre-frozen, as freezing kills the parasite. The best way to avoid anisakis, is to buy pre-frozen fish, or always cook it above 145 degrees.
